Andalusian Pastela in Málaga

A taste of Al-Andalus in the heart of Málaga. Crispy pastry, spiced fillings and centuries of culinary tradition.

Handcrafted chicken and almond pastela — Andalusian recipe

A tradition that crossed centuries

In the kitchens of ancient Al-Andalus, where Málaga was a port of spices and a crossroads of cultures, a dish was born that combined sweet and savoury in layers of paper-thin dough. The pastela was for centuries part of Andalusian banquets — a luxury bite that brought together almonds, cinnamon, spiced meat and the delicacy of artisan hands.

That tradition did not disappear. It survived in family recipes, in North African kitchens and in the gastronomic memory of Andalusia. Today we revive it in Málaga, in the same historic centre where those spices arrived more than a thousand years ago.

Each pastela we make is a tribute to that legacy: hand-made crispy pastry, slow-cooked fillings with noble spices and respect for a craft passed down through generations. History you can taste.
